“S’more” Summer Desserts for Memorial Day Weekend!!

I am posting the desserts we made for Memorial Day weekend a bit late but better late than never to share these great summer desserts.  My mom made the perfect lemon bar, I made pizzelle for our homemade ice cream sandwiches, and the s’mores we made were a group effort.


Lemon Bar Recipe:                                                                                                                             

My mom made these lemon bars were super easy and tasty where it was hard to just eat one.

Ice Cream Sandwiches made with Pizzelle and Homemade Ice Cream:

We made homemade ice cream sandwiches so I made pizzelle and homemade custard ice cream and I doubled the recipe so there would be enough for the ice cream sandwiches since we usually just scoop ice cream for a brownie or cookie sundae.           

Homemade Vanilla Custard Ice Cream:

Homemade Pizzelle:                                                                                                                          Pizzelle are a great crispy cookie to use because they hold up well and won’t get too soft or soggy from the ice cream.  I add a little cinnamon and both vanilla and almond extract to the recipe for some extra flavor.


S’mores:                                                                                                                                                   The s’mores were made as a group effort.  I melted the Ghirardelli Dark Chocolate 60% Cocoa Chip in the microwave in 30 second increments. I melted 1 cup of dark chocolate chips for about a minute them I spread the chocolate on a half of a graham cracker while my sister and her husband used a small torch to roast the large marshmallows for each s’more. We placed a roasted marshmallow over the melted Ghirardelli dark chocolate then topped with half a graham cracker. Finally ENJOY and eat the dessert sandwich!!!
